My husband and I love Love LOVE peanut butter, sunbutter, almond butter etc… He literally can put it on everything (yes everything).
So here is a delicious treat to have after dinner for a little snack, or with any meal. My favorite is to dip an apple into this for breakfast or a snack mid day with celery.
Homemade Cashew Butter:
Ingredients:
2 cups raw cashews
2 tbsp Grade B maple syrup
2 tsp vanilla extract
1 tsp cinnamon
1 tbsp of coconut oil (melted)
1 teaspoon of pumpkin spice
Directions:
In a food processor or blender mix nuts until they have a “creamy” texture.
Then add the pumpkin spice, cinnamon, vanilla, maple syrup and continue to blend.
Last spoon in the melted coconut oil and continue to process or blend until the mixture has a “butter” like texture.
I then scoop mine into a mason jar and top on apples, paleo pancakes, celery, or by itself.
