It seems like in the summer we are outside longer, kids activities go later, and we are on the go go go.
So to combat that with choosing a drive thru over 5 minute meals I have created this delicious Taco Tuesday. Treat!
It is quick, tasty, and will leave the whole family wanting seconds!
Fit Chic Burrito Bowl:
Ingredients: 1/2 teaspoon creole seasoning
1/2 teaspoon ground cumin
1 clove of garlic
1 tablespoon olive or avocado oil
1/4 cup of red onion
1/2 cup of peppers
1 head cauliflower riced (or one 16-ounce bag riced cauliflower)
1/3 cup chopped fresh cilantro, divided
1/4 cup freshly squeezed lime juice
1 cup diced or shredded cooked chicken (you can use rotisserie or already diced chicken)
1 cup salsa
1 avocado, peeled, pitted, and sliced
Directions:
Heat the oil and garlic, onion, and peppers in a large skillet over medium heat until shimmering. Add the riced cauliflower. Cook, stirring occasionally, until the cauliflower is heated through and just tender, 3 to 5 minutes. Remove from the heat. Add cilantro and the lime juice, and stir to combine.
Divide the riced cauliflower among 4 bowls. Top with chicken mixutre, pico de gallo or salsa, and avocado slices.
