Lets Keep the Pumpkin Theme going this week with this delicious easy to throw together snack. This is great for grab and go’s, and satisfy that sweet and salty craving!
Ingredients:
2 1/4 cups raw cashews
1/2 – 2/3 cup raw walnuts pieces
1/2 cup raw pumpkin seeds
1/2 – 1/3 cup chopped pecans
1/4 to 1/2 cup almond butter or sunflower butter
2 tbsp coconut oil
1 tsp vanilla
1 tbsp pumpkin spice
3 tsp of cinnamon
1 cup dried unsweetened cranberries
1/2 cup of unsweetened coconut flakes
1 cup dark cacao chips (Optional)
Directions:
In a small crockpot (a large one will work too) add nuts and seeds.
Next place almond butter, cranberries, coconut oil, and spices.
Last, top with unsweetened coconut and dark chocolate chips.
Turn crock on high and let cook for 60 to 90 minutes stirring every 25 minutes .
Once the nuts are slightly browned, remove from the crockpot and place on wax or parchment paper and spread out with a rubber scrapper.
Let cool for 10 minutes and place into small ziploc bags or one large ziploc bag.
