I made this recipe for a recent bake sale our gym held and it was a HUGE hit!
It is one of the easiest recipes to make, and you can place in individual snack bags so you can grab and go when you need a quick and tasty snack.
Ingredients:
2 cups raw mixed nuts (cashews, brazilian nuts, walnuts, hazelnuts,
1 cup unsweetened coconut chips or flakes
1/3 cup organic coconut palm sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
4 -5 tablespoons of coconut oil melted
½ cup unsweetened dried cranberries
1/2 cup dried bananas
1/2 cup of dried unsweetened pineapple
1/2 cup of dried unsweetened papaya
½ cup dark or vegan chocolate chips (optional)
Directions:
In a crockpot place your nuts, coconut, sugar, cinnamon, vanilla, dried fruit, banana chips, and coconut oil in crock pot. Mix together and place on high for 45- 60 minutes. Stir a few times checking to make sure coconut flakes do not burn. Reduce to low after 45 minutes and continue cooking for 20 to 30 minutes. Remove from crockpot and place on wax paper to dry out. Then place in the chocolate if you wish. Let cool then store in an storage container or individual snack bags.
