Today is my husbands birthday (Happy Birthday Babe), and I wanted to make him a birthday treat that would not only taste good but would not leave him with a huge sugar hangover and/or stomach ache.
Not only where these cupcakes amazing they also were good for you!
Now you have no excuses, for birthdays anymore!
Ingredients:
2 cups of almond flour
1 cup of coconut flour
1/2 teas salt
1 teas. baking soda
1/4 cup of agave
1/8 cup of honey
1/4 cup olive oil
3 eggs
1 tablespoon of vanilla
1/4 cup of shredded unsweetened coconut
1/4 to 1/2 cup of vanilla coconut creamer
Chocolate Frosting Ingredients:
1 bag of dark chocolate cacao chips
3 Tablespoons of sunbutter
1/2 tablespoon of vanilla
1 tablespoon of agave nectar or honey
Directions:
Pre-heat oven to 350 in a large bowl mix flours, salt, and baking soda mix thoroughly. Then add agave, honey, vanilla, oil, creamer, and milk stir throughout. Then add two eggs (whisked) continue to mix for 3 to 5 minutes. Place in a muffin tin 3/4 full and bake for 20 minutes.
In a separate bowl melt chocolate chips (I microwaved them for 35 to 45 seconds), when the chips are completely melted add sunbutter, agave, and vanilla and place in the freezer for 10 minutes. Take out and let thicken and then place the frosting on top of the cupcakes.
