I made this very easy and delicious recipe for dinner Monday night. Then I had the leftover chicken over spinach with steamed Brussel sprouts, asparagus, and raw walnuts and it was heavenly.
Ingredients:
4 chicken breasts
1/4 cup of olive oil
1 jar of olive tapenade spread ( I used Sanas, you can use trader joes, or your local grocery store should have one too)
1/8 cup of balsamic vinaigrette
2 teaspoons of garlic powder
Directions:
Line a cooking sheet with aluminum foil brush top of chicken breasts with olive oil and balsamic and then top with olive tapenade to evenly distributed.
Sprinkle Garlic Powder on top.
Bake at 350 degrees for 25 – 30 minutes or until chicken breasts are completely cooked with no pink in the middle and olive topping is lightly browned.
Remove from oven and serve.
