It is National Celery Month, and there is no better way to celebrate than with this delicious celery soup recipe.
It is a light detoxifying soup that gives you all the benefits that come along with eating those pretty green stalks.
Celery reduces gut inflammation and bloating. It is loading with Vitamin K, B, calcium, and potassium.
This recipe is simple, easy, and effective just the way I like it!
Ingredients:
1 bunch celery (about 6 cups)
1 onion diced
1/2 cup coconut milk
4 cups vegetable Broth
1 cup of steamed cauliflower
3 cloves of garlic
1tsp of pepper
pinch of Himalayan sea salt
Directions:
- Heat the oil in large pot on medium heat. Add the diced onion, cauliflower, and celery and sauté for 10 minutes. Add the garlic and sauté another minute or two, until fragrant.
- Add the stock and salt to the pot. Increase the heat to high and bring to a boil, then reduce the heat to low and cover the pot. Simmer for 20 minutes.
- Remove the soup from the heat and add the coconut milk. Use a blender or food processor to blend the soup, making it as creamy or chunky as you’d like.
- Serve the soup and garnish with celery leaves and a sprinkle of black pepper and turmeric if you like. You can put in Tupperware’s and store in the freezer too.
