This is one of my favorites I make over and over again. It is very easy to make and tastes amazing. It also freezes well for the cold winter months. You can top it with bacon to add some protein as well!
Ingredients –
8-10 cups broccoli, chopped
1 medium-sized cauliflower, chopped
1 medium onion, diced (about 1 cup)
3 garlic cloves, minced
1 tablespoon of pesto
4 cups vegetable broth
1 cup coconut milk
2 tbsp of grass-fed butter
Directions:
- Cut the core out of the cauliflower and stems of broccoli and trim off any leaves. Roughly chop it. Add that to the pot.
- Add the onion, broth, pesto, and butter to the pot.
- Bring to a boil, then reduce to a simmer for about 20 minutes or until all the veggies are tender.
- Allow to cool slightly, then add the coconut milk. Puree the mixture until smooth using a blender. Caution: You may need to do two or more batches so the blender doesn’t overflow.
