Mangos are in season right now, and every grocery store you go to you can see the mounds and mounds of mangos all around you.
Whenever I see fruits in veggies in season, I always think “what fun recipe can I create with it”? What better than mangos in salsa on top of Salmon.
This is great recipe and the sweet and salty mix is the perfect complement to the fish. This is a perfect meal for the spring and summer months as well.
Ingredients for the Salmon:
1-2 pounds fresh salmon
1 tablespoon honey
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/2 tablespoon smoked paprika
1/2 tablespoon onion powder
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon of crushed red pepper
Preheat the oven to 400 degrees.
Next line a baking sheet with aluminum foil.
In a medium bowl, mix spices together until completely blended. Rub spices over salmon evenly and place on the aluminum foiled baking sheet. Bake for 18-22 minutes, turning once if desired. Serve immediately and top with the delicious Mango Salsa.
Salsa Ingredients:
1 avocado peeled and diced
1 medium ripe mango peeled and diced into small chunks
1 cup cherry tomatoes halved
1/4 cup of cilantro
3 tablespoons of melted coconut oil
2 tablespoons fresh squeezed lime
2 tablespoons of fresh squeezed lemon
1 teaspoon of garlic powder
salt and pepper to taste
Directions:
In a medium bowl put avocado, mango, tomatoes, and cilantro and mix.
Next combine melted coconut oil, lime, lemon and mix.
Last add the garlic, salt, and pepper and mix then serve on top of salmon.
