Ingredients
- 6 yellow summer squash, sliced
- 2-1/4 cups shredded cheddar cheese, ( I used Daiya you could use grass fed cheddar too)
- 1 medium onion, chopped
- 1 can chopped green chiles
- 2 cloves of garlic
- 1 tsp of creole seasoning
- 1/4 cup almond flour
- 1/2 teaspoon salt
- 3/4 cup salsa
- 4 green onions, sliced
- 1 avocado diced
Directions
- 1. Preheat oven to 400°. In a large bowl, combine squash, 3/4 cup cheese, onion, chiles garlic and creole seasoning. Sprinkle with flour stir till combined.
- 2. Transfer to a greased (I used olive oil spray) 13×9-in. baking dish. Bake, covered, until squash is tender, 30-40 minutes.
- 3. Spoon salsa and avocado over top; sprinkle with remaining 1-1/2 cups cheese. Bake, uncovered, until golden brown, 10-15 minutes longer. Let stand 10 minutes.
