Cauliflower is one of my favorite veggies! I love how many wonderful recipes you can come up with to make it feel like your eating a treat. This is definitely one that’s a treat!
INGREDIENTS
8 slices of bacon, (crispy)
1 large head cauliflower, cut into florets
1/2 cup Just Ranch or Primal Ranch
1/2 cup mayonnaise
2 cloves of garlic
¼ teaspoon black pepper
1 cup shredded daiya shredded cheese
1/2 cup of parmesan cheese (you can use the vegan parmesan for this too)
6 tablespoons chopped fresh chives, divided
Directions:
- Preheat oven to 370 degrees.
- Spray a 13×9 baking dish with non-stick cooking spray.
- Fry bacon in a large skillet until crispy and crumble. Set aside.
- Cut the cauliflower into pieces place a splash of water in microwave safe dish and microwave for 10 minutes.
- Combine your ranch, mayonnaise, garlic, and black pepper in a large bowl. Add the steamed cauliflower florets, 1/2 of the bacon, 1 cup of cheddar cheese and 3 tablespoons chives; mix well. Transfer mixture to the prepared baking dish and top with your parmesan and the other half of the bacon.
- Cover dish with foil and bake for 20 minutes. Remove foil and bake another 5-10 minutes or just until cheese is beginning to brown. Top casserole with remaining chives.
