16 oz cooked large shrimp, peeled
chipotle chili powder to taste
2 tbsp red onion diced, divided
2 tbsp cilantro, chopped
1 clove of minced garlic
Juice of 1/2 lime or a Tbsp of lime juice
2 tbsp of olive oil
2 Tbsp. lemon juice
1 cucumber, diced
2 cups diced roma tomatoes
1 ripe hass avocado, diced ( love avocado so you can use two)
salt to taste
dash of pepper
optional diced jalapenos
DIRECTIONS:
Rinse shrimp and chop into large chunks. Toss shrimp, olive oil,onion, lemon, with a little salt, chipotle chili, pepper, and fresh lime juice.
Place in the refrigerator and let marinate for 20 minutes.
In a large plastic or clear bowl place cucumber, tomato, garlic, jalapeños, cucumber, avocado, and pour shrimp on top.
Place back in the refrigerator for another 10 to 20 minutes. Then top with cilantro before serving.
Place over romaine lettuce leaves or on top of tortilla tips or corn tortillas.
