This is a new fun recipe I added to the mix. My friend had posted a picture of a “Pizza Pot Pie”. I was trying to come up with a fun new “sunday breakfast” and so I thought why not combine Pizza with Eggs and make a “Pizza Quiche”. It turned out amazing and it will be great to have for leftovers for the week.
Pizza Quiche:
Crust:
1 cup of almond flour
1/4 cup of olive oil
1/4 tsp of baking soda
1/4 tsp of salt
Filling:
2 tablespoons olive oil
1 to 1/2 cup pizza sauce (I like Rao’s)
1 pound Italian sausage
1/2 cup diced onion
1/2 cup diced green pepper
2 cloves garlic
1 cup of mushrooms
dash of pepper
1/3 cup sliced black olives
12 large eggs
1 cup almond, cashew, or coconut milk
2/3 cup coconut creamer or heavy creamer
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
1/2 cup grated raw or almond mozzarella cheese
For the Topping
20 thinly sliced pepperoni slices
1/2 cup grated raw or almond mozzarella cheese
1/4 cup of parmesan cheese (optional)
Directions:
- Pre-heat oven to 375
- In a small bowl mix together the crust ingredients
- Spread the crust in a thin layer over the bottom of the baking dish and bake in the oven for 10 minutes – until crust is brown and hardened. Remove and set aside.
- While crust is baking, heat 2 Tbsp of olive oil in a skillet and add the sausage, marinara sauce, veggies, and spices until the sausage is cooked through.
- Take the crust out of the oven.
- Grab a large bowl and combine eggs, cheese, creamer, milk and whisk until eggs are completely blended.
- Then pour sausage mix into the egg blend and stir. Pour over warm pizza crust.
- Last top with pepperoni and cheeses. Place back in the oven and cook for 35 to 45 minutes or until eggs are cooked throughout (if unsure stick a fork in the middle and make sure it comes out dry).
