I wanted a simple, quick, easy way to make a tasty breakfast. So this past weekend I came up with this delicious recipe that tastes great and there’s enough for meals for the week.
Ingredients:
½ a red onion- diced
1/4 cup of red pepper
1/4 cup of green pepper
1/4 cup of zucchini
2 small sweet potatoes cooked and diced into ½ inch cubes (or about 2 cups)
2 tablespoons coconut oil
1/2 cup of salsa
1 avocado diced
1/4 tsp of chili powder
2 cups cooked ground turkey or grass-fed beef
5 Eggs
Garnish: Cilantro and Hot Sauce
Directions:
- Pre Heat oven to 400 degrees.
- In a large ziploc bag toss onion, peppers, zucchini, and sweet potato with the melted coconut oil, season with salt, pepper and chili powder and place on a lined baking sheet for about 20 minutes.
- In a medium sauce pan place more oil, salsa, and with turkey or beef. Cook on medium high until the meat is cooked throughout. Crack the eggs over the meat and scramble with the meat.
- Remove potato mixture from oven and top with egg and meat mixture.
- Last top with the avocado slices and cilantro.
- Serve with hot sauce if desire!
