This is a fun delicious recipe that changes it up from your normal routine. It is great to take to work the next day too!
Ingredients
2 boneless skinless chicken breast diced
4 cloves garlic, minced
1 Tbsp extra virgin olive oil
1 Tbsp curry powder
1/4 tsp black pepper
1/2 tsp chili powder
1/2 red onion, chopped
1 Tbsp dry basil
1/2 tsp cardamom
1 tsp ginger
1 can full fat coconut milk
1 Tbsp coconut flour
1 Tbsp chopped cilantro
Directions:
In the crockpot, combine the chicken, oil and garlic. then add in the curry, black pepper, chili powder, onions, dry basil, cardamom, flour, and grated ginger.
Stir the chicken to distribute the spices evenly.
Pour in the coconut milk, and add the top to the crockpot.
Heat on medium for 4-6 hours or low for 8-10.
Serve over cauliflower rice.
