Many of my clients are looking for easy delicious breakfast recipes that can ready to go quickly in the morning.
I use Sunday as my day to prep my egg casserole for the week (or at least 3 days out of the week). Then I store it into separate containers.
When I am feeling rushed in the morning I grab my eggs and I am out the door. Then you can heat them up and eat them at work, or heat them up at home and eat without the prep.
Ingredients:
1-2 Tablespoons of coconut oil
1 lb of lean ground turkey sausage
14 eggs
2 tablespoons of coconut creamer or (nut-based milk)
2 sweet potatoes peeled and diced
1 cup of spinach
1 cup of broccoli
2 cloves of garlic
1 tsp of cumin
1 tsp of creole seasoning
1 can of diced tomatoes
Directions:
In a medium to large crockpot place coconut oil, turkey, diced potatoes, spinach, broccoli, tomatoes, garlic, cumin, and creole seasoning. In a mixing bowl crack the 14 eggs and add milk and whisk until all yolks are combined.
Pour the whisked eggs over the turkey ingredients and cover. Bake on low for 8 hours, medium for 6 hours, or low for 4 hours.
Serve or place into containers for the week and that way in the morning you can just “Grab and G0”.
