I make these with for the festive holiday. Kids love them, adults love them and they are really easy and great for large groups. I have noticed if you make eating fun, kids are more apt to eat healthy without the fuss. Celebrate and Have fun all while keeping your health a priority!
Ingredients:
1lb of lean ground beef or turkey meat
1 cup of diced onions
1/2 red pepper
2-3 avocados
1/2 cup of salsa or pico de gallo
2 cloves of garlic
1 teaspoon of creole seasoning
6 corn taco shells (hard one or soft)
shredded lettuce
1 package of almond cheese or raw cheddar cheese (divided)
1 6 oz can of olives
Directions:
Spray skillet with olive oil mix onions and meat in the skillet with red pepper.
Cook till meat is brown.
Add garlic, creole, and a cup of salsa to the mix with 1/4 cup of cheese
cook on low for 5 -10 minutes.
In separate bowls place shredded lettuce, olives, cheese, salsa, guacamole, and corn tacos.
Guacamole Recipe:
mash 2-3 avocado in a bowl.
Add a teaspoon of onion powder
a teaspoon of garlic powder
1/2 teaspoon of creole seasoning.
Mix throughout (for added taste add a little cilantro as well).
First place the meat inside the taco top with lettuce, cheese, and salsa. Then add to rounded scoops of guacamole on each side and place an olive on top of this to appear as eyes.
