I am obsessed with cauliflower! I love Love LOVE everything about it. I can come home and literally down a bag like nothing! I also am a huge fan of hummus, but it is not a huge fan of me. So I decided to put the two together to get this delicious snack and treat! Now I have the best of both worlds and a healthy snack all in one!
Ingredients:
4 cups fresh cauliflower florets
4 garlic cloves minced
1/4 cup of lemon juice
3 Tbsp. melted coconut oil
2 Tbsp. tahini
2 tsp. curry powder
1/2 tsp. sea salt
1/2 tsp of cumin
Directions:
- Steam cauliflower and garlic in a steamer until fork tender about 6-8 minutes. Set aside, uncovered, and let cool. You can always cut it up and put cauliflower and garlic in a microwave safe bowl. Place in the microwave for 10-12 minutes.
- Once cauliflower is cooled and is no longer steaming, place all of the ingredients in a food processoror high-powered blender and blend until smooth.
- Serve with cucumber, carrots, celery, and or any veggie you enjoy!
