This is one of my favorite salads! It is easy to make and tastes amazing. The dressing is the most delicious one I have in my book, and can be used with chicken, steak, and much much more!
Ingredients
6 cups spinach
1 cup sun-dried tomatoes
2-3 strips thick cut bacon, cooked to crispy and chopped
½ cup of diced red pepper
1/2 cup of diced red onion
2 6 ounce salmon filets
1/2 cup of sliced steamed broccoli
Creamy Avocado Green Goddess Dressing
2 ripe avocados
3 tablespoons of lemon juice
1 teaspoon salt
1/4 cup of salsa
1 clove garlic
2 tablespoons chives (optional)
Directions:
- Preheat a grill to medium or bake them in oven at 400 degrees for 15 to 18 minutes. Add the salmon to the grill flesh side down. Cook for 3 minutes and then flip and cook for 1-2 more until just cooked through. Transfer to a small plate and set aside.
- In a blender or food processor place avocado, onion, lime, salsa, garlic and salt Process until smooth, creamy dressing forms.
- In a large bowl add the spinach, tomatoes, bacon, broccoli, and red pepper,Top with the grilled salmon and Creamy Avocado Dressing.
