My two favorite spices in the whole world are cilantro and garlic!
The combination is a phenomenal taste that just makes my mouth salvage at the thought! But the one food ingredient that would take this dynamic duo to the next level would be a sweet potato to place these yummy herbs on top of.
Ingredients
3 sweet potatoes
dash of salt (kosher)
Freshly ground pepper
2 tsp finely grated lime zest
Pinch of creole seasoning
1/4 cup olive oil
2 -3 cloves of garlic minced
1/4 cup chopped cilantro
Directions:
Place the potatoes on a baking sheet and heat on 350 for 20 minutes or until potatoes are slightly tender.
Let cool, then slice each potato into eights lengthwise.
Preheat grill to medium heat.
In a small bowl mix salt, lime zest, and creole seasoning, and garlic in a bowl.
Brush the potatoes with oil and season with salt and pepper.
Place on the grill
grill on all sides until golden brown and cooked through {about 3-4 minutes each side including the skin.
Place on a plate or platter and sprinkle with lime-salt mixture and chopped cilantro.
Enjoy!
