My husband asked for a little treat, and so I went into the kitchen and found a lot of coconut and dark chocolate so here is what I created …Little Mounds.
These tasty little delights are very satisfying and light so you will feel satisfied but not over indulged either!
Mounds Treats:
Ingredients:
1 1/2 unsweetened shredded coconut
1/4 cup of grass-fed butter
1/4 cup of melted coconut oil
2 tablespoons of honey or grade B Maple Syrup
3/4 C – 1 C of dark cacao chocolate chips
Directions:
In a medium bowl mix coconut, melted butter, melted coconut oil, and maple syrup together until mixed throughout and bonded together.
Place small mound balls of coconut onto a baking sheet (this should make around 10 -12).
In a small saucepan over low heat melt the chocolate chips and remove from heat.
Use a rubber scraper and pour chocolate over coconut mounds.
Then place in the freezer for 15-30 minutes.
Serve
