This recipe has been a fan favorite from my clients for this cold winter season.
It is tasty and is “real” comfort food without the “added” comfort to the thighs and tummy!
Ingredients:
1 lb of ground turkey or ground beef
1/2 onion diced
1 14 oz can of diced tomatoes
1 tsp chili powder
1 tsp worchestshire sauce
1 tsp garlic
Topping:
3/4 c of almond flour
1/2 c corn meal
2 Tbsp Palm Sugar
2 tsp baking powder
1/4 tsp salt
1 egg
1/2 c unsweetened almond milk
1 Tbsp Olive Oil
Directions:
Preheat oven to 425 degrees
In a large skillet put 1 tablespoon of olive oil, meat, and onions till meat is cooked throughout. Then add tomatoes, chili powder, worchestshire, and garlic and let simmer form 10 minutes on low heat.
In a medium bowl mix almond flour, cornmeal, sugar, baking powder, salt and stir. In a small bowl beat the egg with olive oil, egg, and almond milk. Pour egg mixture into the flour mixture and beat on low with mixer for 2 minutes (or until mixed).
Bake at 425 for 12 to 18 minutes (till slightly browned around the edges.
