Everyone enjoys a delicious dressing on their salad so why not combine a seasonal pumpkin with a delicious vinaigrette. This is a perfect topping to any Autumn salad blend.
Ingredients;
¼ cup pumpkin puree
¼ cup apple cider vinegar
2 tablespoons Grade B maple syrup
1 teaspoon Dijon mustard
1 teaspoon of garlic
½ teaspoon sea salt
½ cup extra virgin olive oil
1 teaspoon of balsamic vinaigrette
Directions:
Combine pumpkin puree, apple cider vinegar, maple syrup, Dijon mustard, garlic, and salt in a medium size bowl and whisk until well combined.
Add olive oil slowly. whisking continually
Add the balsamic and stir until mixed.
Store in a covered container in the refrigerator for up to 5 days.
