I wanted to create a delicious recipe for our dinner party this past saturday evening and so this is what i came up with and it was a definite hit!
Ingredients for Nutella:
1 cup of raw hazelnuts
6 tablespoons coconut cream or coconut half and half
2 tablespoons of unsweetened cocoa powder
2 tablespoons of grade B maple syrup
1/2 teaspoon of vanilla extract
4 oz unsweetened bakers chocolate (cut into small pieces)
dash of salt
1 cup of raspberries
*optional whip cream and unsweetened shredded coconut for added delight
Crust:
1/4 to 1/3 cup of coconut flour
3/4 cup of cashew flour
1/3 egg white
3 tablespoons of almond or cashew butter
1 tablespoon of coconut palm sugar
1 teaspoon of cinnamon
Directions for Nutella:
Pre-heat oven to 350
Place hazelnuts on a parchment paper lined baking sheet for 10 minutes. Remove from Oven and place into your food processor (you can use a blender as well). Mix until the hazelnuts are smooth and creamy. Next add coconut creamer, vanilla, maple syrup, coca powder, small pieces of baking chocolate, and a dash of salt. Continue to mix until all ingredients are mixed in and the mixture is a creamy nutella texture.
For the Crust:
Keep oven heated at 350.
In a medium mixing bowl place crust ingredients: flours, coconut sugars, egg whites, almond butter, and cinnamon. Mix thoroughly and spread evenly onto a waxed paper lined baking sheet in the shape of a pizza. Place in the oven for 10 minutes or until crust is slightly browned.
Remove crust from oven and let cool for 5 minutes. Next top with nutella ( I used a rubber scrapper) and raspberries.
Slice into pizza slices and serve with optional whipped cream topping and coconut.
