Ingredients
1 cup of diced cherry tomatoes
1 pound red potatoes, quartered
1 large yellow bell peppers, sliced into 1-inch pieces
1 large red bell pepper sliced into 1 -inch pieces
1 cup large red onion, quartered
1 tablespoon coconut oil
3 cloves garlic, roughly chopped
6 Italian Sausage Links
2 teaspoons of dried thyme
2 teaspoons of dried rosemary
1 zucchini sliced into 1 inch rounds
1 head of broccoli diced (about 1 cup)
Directions
Preheat oven to 425°F.
In a large casserole dish (9×13) toss tomatoes, potatoes, bell peppers, red onion, zucchini, broccoli, with one tablespoon coconut oil and garlic.
Place the sausage links on top of the vegetables. Place rosemary, thyme, and a dash of pepper throughout the dish. Cover with foil and bake uncovered for 45 minutes, until sausage is brown on top. Using tongs, flip the sausages over and bake for 10 to 15 more minutes, until fully cooked through
Serve Immediately
