I love quick, easy, delicious recipes that will leave your taste buds feeling like they are on cloud nine. Here is a great one that is so easy even the most cooking challenged could accomplish this task!
Ingredients:
2 Tbsp applesauce
2 Tbsp coconut oil (melted)
2 Tbsp unsweetened almond milk
1/2 tsp vanilla extract
1/4 cup of coconut flour
1 scoop of vanilla whey protein powder
2 Tbsp Palm Sugar
1tsp ground cinnamon
1/2 tsp pumpkin spice
1/4 tsp baking powder
Cream Cheese Icing
1 Tbsp greek cream cheese
1 Tbsp of all natural peanut butter ( you can use sun butter or almond butter too)
2 Tbsp palm sugar (place in a blender and grind until sugar is thin a powder – like
1 tsp coconut creamer
Directions:
In a mug place flour, protein, vanilla, milk, coconut oil, cinnamon, pumpkin spice, applesauce, almond milk, sugar, and baking powder. Whisk together with a fork until combined and smooth. Microwave mug on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 to 30 seconds.
In a small bowl combine cream cheese, creamer, peanut butter, and sugar. Microwave for 20 seconds and stir until cream cheese is blended completely.
Serve warm topped with Cream Cheese Icing.
