Casseroles are fantastic… They have amazing flavor, easy ingredients, and you can throw them together in minutes. They are also a 3 in 1 meal. That means you have your protein, carb, and fat all in one bite!
This particular casserole I make, is a crowd pleaser (especially with the husbands and kids). You can prepare it in the morning and bake it at night or if you would like you can add all the ingredients to your crock pot and let the wonderful flavor marinate all day. Now when you get home you don’t have to think about what to cook, it will already be ready for you.
Ingredients:
1 lb of grass-fed beef (or lean ground beef)
1/2 red onion diced
1/2 teaspoon pepper
2 cloves of garlic
1/2 teaspoon of red pepper
1/2 carton or 8 oz of roasted red pepper soup ( I get mine from Trader Joes)
1 can of green beans
1/4 cup of water
1/2 cup of unsweetened coconut or almond milk
2 tablespoons of grass-fed butter
2 sweet potatoes diced
1 egg
*optional 1/2 cup of raw or almond milk cheddar cheese
Directions:
Heat oven to 450 and cook potatoes for 40-55 minutes (until soft all the way through)
Reduce heat to 350 degrees F. In a large skillet, cook ground beef and onion until beef is thoroughly cooked; stirring frequently.
Stir in 1/2 teaspoon of pepper, garlic, red pepper, green beans, and soup.
Pour ingredients into an 1 1/2 quart casserole dish.
In medium saucepan, bring water and butter to a boil.
Remove from heat.
Stir in milk and potato (with out the skin) and with a fork mix until potatoes are mashed.
Stir in the egg until well blended.
Spoon potatoes in mounds over beef mixture.
Sprinkle the cheese over all.
Bake at 350 degrees for 25-30 minutes or until thoroughly heated.
Let cool for 10 to 15 minutes.
