Here is a great side dish for Christmas or Holiday dinner you are celebrating. It is very simple but will leave your guests asking for the recipe!
The veggies are very colorful for the table as well, and have a nice variety so all at the table can enjoy!
Ingredients:
1 lb. Brussels sprouts, trimmed, cut in half
1 pkg. (1 lb.) carrots, peeled, cut diagonally into 1-inch pieces
1 lb. white sweet potatoes, cut into quarters
1/2 lb. fresh mushrooms
1/2 lb. baby carrots
1 onion, cut into 1/2-inch-thick wedges
1/2 cup Cherry Balsamic Dressing
2 cloves of garlic
1 cup coarsely chopped raw pecans
Directions:
Heat oven to 400ºF. Toss vegetables with dressing and garlic; spread onto bottom of 15x10x1-inch pan.
Bake 15 min. Add nuts; mix lightly. Bake 20 min. or until potatoes are tender.
