In our home Christmas isn’t Christmas without Swedish Meatballs ..
So when I found out about my gluten issues I was devastated that I could not be able to share in the annual family tradition..
So instead of sulking I created a “Fit Chic” recipe. The best part my family said they were the best meatballs they had ever had!
Ingredients for Meatballs:
2 tablespoons coconut oil, divided
1 onion, diced
1 pound ground beef (grass-fed preferred)
1 pound ground pork
1/2 cup almond flour
2 large egg yolks
1/4 teaspoon ground allspice
1/2 teas. of cinnamon
1 clove of garlic (minced)
dash of pepper
Gravy:
1 Garlic Clove, finely minced
1 14 oz Can of Full-Fat Coconut Milk
2 cups of Beef Broth
2 Tablespoons of grass-fed butter or ghee
1 teaspoon of Black Pepper
3 Tablespoons of coconut flour
- Heat 1 tablespoon coconut oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
- In a large bowl, combine ground beef, ground pork, almond flour, egg yolks, allspice, cinnamon, garlic and cooked onion; season with pepper, to taste. Using your clean hands, stir until well combined. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs, forming about 20 to 24 meatballs.
- Add remaining 1 tablespoon coconut oil to the skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel-lined plate.
- To make the gravy, melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and coconut oil and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Season with Pepper to taste.
- Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.
- Place in oven on low/warm for 5 to 10 minutes to let the gravy stick to the meatballs
- Top with parsley to taste.
