Almond Butter Chocolate Chip Muffins
2 ripe bananas
2 eggs
1 cup raw almond butter or sun butter
1 scoop of vanilla or chocolate whey protein powder
1/4 cup honey
2 tablespoons vanilla extract
1/2 teaspoon baking soda
pinch of sea salt
8 oz of dark cacao chocolate chips
Directions:
Preheat oven to 400 degrees. Spray a mini-muffin tin with cooking spray (I use coconut oil spray)
In a mixing bowl add bananas, eggs, Almond butter, honey, vanilla, baking soda and sea salt. With a mixer blend until a smooth batter is formed, around 2 minutes. Then add the protein powder and continue mixing about another 1-2 minutes.
-Using a tablespoon, scoop batter into mini-muffin cups, filling a little over halfway. Top with a few chocolate chips. around 4-5 per muffin.
-Bake for 10-12 minutes or until tops are set and toothpick inserted comes out clean.
-Let cool for 10 minutes and enjoy!
