I am always trying to find new innovative ways to create summer salads so we can eat healthy and not get bored with the same salads.
Here is a great salad twist that has a combination that will be sure to knock your socks off!
It also took me about 5 minutes to prepare.
Ingredients:
1 1/2 cucumbers thinly sliced
1 tomato diced
1/4 red onion, peeled, halved lengthwise, and thinly sliced
2 tablespoons of olive oil
1 tablespoon of mint leaves chopped
1/2 tablespoon of balsamic vinaigrette
2 cloves of minced garlic
2 teaspoons of dill
1 teaspoon of pepper
dash of salt
Directions:
in a large bowl combine cucumber, tomato, onion, and garlic and mix.
Next add the olive oil, balsamic, dill, pepper, mint, and salt.
Toss the salad thoroughly so that all the ingredients are mixed together.
