Yes I said it “Sweet Potato”. I am sure most of you are thinking how can a sweet potato mix with a brownie?
Well not only does it mix, it is delicious and nutritious too!
Bring these to an event or just a good little treat to have around the house and it will blow people’s socks off!
Sweet Potato Brownies:
Ingredients:
4 tablespoons of grass-fed butter
1 tablespoon of coconut oil
2/3 cup natural (non-alkalized) cocoa powder
1/2 cup almond flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1 teaspoon of cinnamon
1/3 cup of raw honey
1-2 medium sized sweet potatoes mashed
1 large egg
1 1/2 teaspoons pure vanilla extract
1/4 cup of unsweetened coconut
1/2 cup of sunbutter or raw almond butter
1 tablespoon of unsweetened almond milk
6 oz of melted dark cacao chocolate chips
Directions:
1. Heat oven to 350 degrees F and lightly coat an 8 x 8 x 2 inch baking pan with cooking spray.
2. In a small saucepan, melt the butter, coconut oil, and chocolate chips over very low heat. Remove pan from heat, add the cocoa powder and stir until a paste forms.
3. In a large bowl, whisk together the flour, baking powder, salt and pumpkin pie spice and cinnamon. Add the butter-cocoa mixture, sweet potato puree, honey, almond milk, sunbutter, egg and vanilla. Stir until thoroughly combined.
4. Spread brownie batter into the bottom of the prepared pan and even it with the back of a spoon or an offset spatula. Bake for about 20 minutes, until the top appears barely dry and moist crumbs adhere to a toothpick or knife inserted into the middle.
5. Let cool for about 10 minutes before serving
