As many of you know, I do most of my creating on Sundays. I have time, energy, and a creative spirit.
I like to start with the most important meal of the day; breakfast.
This past Sunday I came up with these little treats and my husband didn’t even save a crumb for the dog!
They are so easy and taste delicious! Plus they are mini and a little taste goes a long way!
INGREDIENTS
- 2 ripe bananas, smashed
- 3/4 cup almond or gluten free flour
- 3 tbsp coconut palm sugar
- 1 egg
- 2 tbsp melted grass-fed butter or coconut oil
- 1/2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp of pumpkin spice
- Frosting:
- 1/2 cup of dark cacao chocolate chips
- 1 Tbsp of melted coconut oil
Directions:
I used my mini Donut Maker … Or you can preheat the oven to 350 and use a donut pan for baking.
In medium bowl smash ripe bananas with fork – add all ingredients
Fill the batter 3/4 of the way in pan or donut maker. Bake for 10 minutes or until light goes on with the donut maker. Remove donuts from pan.
Chocolate Glaze: microwave chocolate chips and coconut oil in microwave safe bowl. Dip donuts face down in melted chocolate or you can drizzle chocolate over the top. You can eat them right away, or store in the refrigerator in sealed container and reheat for later.
