I recently hosted a cooking class at Plums Cooking, called “All Things Pumpkin”. We had everything from Pumpkin Martini’s, Pumpkin Chili, and Pumpkin Protein Bites. One of the best and easiest recipes of the night was my pumpkin hummus.
It is an easy delicious recipe that when pared with pecan crackers, Chips, and cucumber rounds will leave your palette feeling happy! It is festive, simple, and everyone needs to try it immediately!
Ingredients:
½ cup pumpkin (I used organic canned pumpkin)
½ cup tahini
3-4 garlic cloves, minced
2 tablespoons melted coconut oil
1 tablespoon lemon juice
½ teaspoon paprika
¼ teaspoon tumeric
1 tsp of cumin
Directions:
Combine all ingredients together in a food processor or blender and blend until smooth. Place in a decorative chip bowl or regular bowl and serve with crackers, chips, and cucumbers or all of the above!
