Spring Vegetable Coconut Curry
Ingredients for the Curry
1 tablespoon coconut oil
1/2 small onion,
sliced 3 garlic cloves, chopped
1 1/4 tablespoons mild curry powder. I like Frontier curry powder.
1 cup coconut milk
1/2 cup of carrots, cut into 3/4 inch chunks
1/2 cup of red pepper cut into 1 inch long pieces
1 cup of broccoli
1 yellow zucchini diced into 1 inch rounds
16 asparagus spears, tough ends removed and cut into 1 inch pieces
A handful of snow peas (about 12)
3 teaspoons cashew butter (you can use almond as well)
Directions:
Heat oil in a medium saucepan. Add the onion and garlic and cook on medium heat until the onion is slightly browned.
Sprinkle curry powder over the onion, give it a quick stir and immediately pour in the coconut milk, 1 1/2 cups of water and salt. Bring to a boil.
Once the curry comes to a boil, add the carrot chunks and zucchini and continue boiling for one minute.
Add the snow peas, red pepper, broccoli, and asparagus and continue cooking until the asparagus is cooked, but still bright green and crisp.
Stir in almond or cashew butter and serve over cilantro rice.
Cilantro Lime Cauliflower Rice:
Ingredients
1 large head of cauliflower
4 cloves of garlic, finely minced
3 tbsp olive oil
2 limes, juiced
3 tbsp finely chopped cilantro leaves
1 tsp of cumin
Directions:
Chop your cauliflower into florets slightly larger than bite sized and place into a food processor and pulse a few times until the pieces resemble grains of rice.
Place olive oil and minced garlic into a large pan over medium heat. Saute the garlic until slightly browned, about 4-5 minutes.
Pour the riced cauliflower into the pan and toss to coat with the olive oil and garlic. Keep stirring and moving the cauliflower around as it cooks for another 5-6 minutes. Stir in the lime juice, then cover the pan and let the juice steam the rice for 5 minutes. Mix in the chopped cilantro and cumin and remove from heat.
