This is quick, delicious, healthy, and one to have on hand when you are in a hurry!
Ingredients
3 cups cooked cauliflower rice
1 cup shredded zucchini
1-2 tablespoons of grass-fed butter or coconut oil
1 cup shredded Daiya Cheddar Cheese 1/4 tsp garlic powder
1/2 to 1 tsp of garlic powder
1 cup of steamed broccoli
dash of salt & pepper
For Protein add 1 can of albacore tuna
Directions:
- Mix cauliflower rice, butter, garlic, zucchini, broccoli, salt and pepper, tuna (optional), and top with cheese.
- Microwave for 2 minutes (if the cheese isn’t melted microwave 30 more seconds)
- Enjoy!
