With Summer Squash in full bloom, this a great recipe to be used as a side dish, main dish for vegetarians, and/or potluck!
Ingredients:
2 small zucchini, thinly sliced
1 small yellow squash, thinly sliced
4 eggs
1/2 cup olive oil may
1/4 cup Grated Parmesan Cheese (you can use the brand Daiya for Vegetarians)
1/2 cup of diced onion
½ cup chopped green peppers
1/4 tsp. salt and black pepper
1/2 cup of diced tomato
1 tablespoon of truffle oil
2 cloves of garlic
*Optional 1/4 cup of shredded Parmesan cheese
Directions:
Pre-heat oven to 375….
In a large skillet greased with coconut oil on medium heat. Add zucchini and yellow squash; cook and stir 5 min. or until tender.
Beat eggs and olive oil in large bowl until well blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; except truffle oil mix lightly. Place into 8-inch square baking dish, and top with the truffle oil.
Bake 30 to 40 min. or until center is set and edges are lightly browned.
