If you want a change up from your morning bowl of oatmeal or cereal, here is a great compliment for you! It’s creamy, satisfying, filling, and energizing to give you just the energy boost you need!
Ingredients:
½ cup plain cooked quinoa (you can used cooked quinoa)
1 banana sliced
1/3 cup of blueberries fresh or frozen
1/3 cup of unsweetened vanilla Almond Milk, coconut, or cashew
1 TBSP Peanut butter or Almond Butter
1 tsp of cinnamon
1/2 tsp of pumpkin spice
1 tablespoon of unsweetened coconut (optional)
Directions:
Cook quinoa if it’s not already cooked, I cook extra and just store in the fridge.
Place all ingredients in a bowl and top with coconut flakes.
Serve warm or cold, I eat it both ways to change it up!
