I love cole slaw in the summer … It is refreshing, tasty, and filling. Here is a great recipe to use as a side dish or main course … and it tastes even more amazing left over!
INGREDIENTS
1 Tbsp of coconut oil
1 lb of grass-fed ground beef
2 Tbsp of sesame oil
2 cloves of garlic
dash of salt and pepper
3 green onion diced
1 14 ounce bag of coleslaw mix
2 Tablespoons of Thai Peanut Sauce
1/2 tsp of sriracha
1/2 tsp of ginger
1 tsp of white vinegar
1 lime wedge (juiced)
1 small red pepper cut into thin strips
Directions:
In a large skillet place coconut oil onions, garlic, and ground beef and season with salt and pepper. Allow to cook on medium to medium- high until beef is cooked throughout.
Next add sesame oil, red pepper, and slaw in sesame oil until cabbage cooked to desired tenderness.
Stir in the thai peanut sauce, Sriracha sauce, ginger, lime, and vinegar.
Mix well and serve.
*Serve with additional unsweetened shredded coconut flakes for added taste.
