The two things that my husband loves most in the world (food wise) is bacon and pancakes. So for his birthday breakfast, I decided to combine the two to make the most delicious combo that will leave every single male on the planet eating out of the palm of your hands ladies….
Ingredients:
3 slices of bacon cut in half
1 cup of almond flour
1 scoop of vanilla whey protein powder
1/2 teaspoon of vanilla
3 tablespoons of unsweetened coconut
1 ripe banana
1/4 cup of dark cacao chocolate chips
1 egg
1 teaspoon of cinnamon
1/2 cup of almond milk
1/2 cup of coconut creamer
1/2 cup of grass-fed butter softened
Directions:
In a large skillet combine 1 tablespoon of coconut oil and the strips of bacon.
While the bacon is cooking in a large mixing bowl, combine almond flour, cinnamon, and whey protein.
In a small bowl mash the banana and then add to the flour mixture.
Combine egg, almond milk, coconut creamer, vanilla, butter, and coconut. Mix until all ingredients are completely mixed throughout and there are no clumps in the butter or banana.
Remove the bacon from the skillet and pour grease into a saucer!
Cut cooked bacon into pieces and toss them into the pancake batter.
Spray the skillet with cooking spray and pour 1/4 cup of batter into the skillet and cook.
Microwave chocolate chips on high for 30 seconds or until chocolate chip are melted.
Next pour melted chips into the bacon saucer and mix thoroughly. (make sure the bacon grease is hot and not thick).
Pour chocolate mix on top of the pancakes to act as “syrup”.
