Our gym is currently doing a nutrition challenge and one of the comments some of the clients had “What can I eat other than eggs for breakfast”?
Sometimes you just want a warm cup of oatmeal or cream of wheat to start your day off right … So here is a great recipe that takes 5 minutes and will give you that warm fuzzy feeling you are looking for!
Ingredients:
1 banana
1/2 C. coconut creamer (you can use full fat coconut milk too)
1/2 C. ground almond or cashew flour
1 tsp. cinnamon
1/2 tsp of pumpkin spice
1/2 C. shredded Unsweetened coconut
1/8 cup of dates
1/8 cup of dried blueberries, cranberries, or raisins (unsweetened)
1/2 cup of apple diced into small pieces (cord)
1/4 cup of raw pecan pieces
Directions:
In a blender or food processor combine banana, creamer, flour, cinnamon, pumpkin spice, coconut, dried fruit of choice and pulse until smooth and oatmeal-like.
Top with diced apples and pecans and stir until well combined.
Microwave for 45 seconds to 1 minute.
