My best friend absolutely LOVES fried pickles. She will go to a restaurant and avoid restaurants that have and do not have fried pickles on the menu …. So here is a fun easy recipe so she doesn’t even need to leave the house to indulge!
Ingredients:
1/4 cup of coconut oil
1 cup almond flour
1/2 teaspoon of onion powder
2 eggs
1 3/4 teaspoons Cajun seasoning
1/2 teaspoon Italian seasoning
1/4 teaspoon cayenne pepper
1/2 teaspoon of garlic
2 cups sliced dill pickles, drained
Directions:
In a medium bowl, combine all dry ingredients and whisk well. In a separate bowl, whisk together the eggs. Dip pickle slices in egg, then coat with dry mixture and place in the coconut oil skillet.
Fry until golden brown, 1 to 2 minutes; remove with a spoon and drain on paper towels. Repeat with the remaining pickles and batter. Serve immediately with paleo mayonnaise.
