I love cilantro and i love sun-dried tomatoes with chicken. I thought this would be a great combination for those cozy fall nights. This is also fantastic over spinach salad for lunch or even tastes amazing with eggs.
INGREDIENTS:
1 & 1/4 pounds free range chicken tenderloins
1 cup lucini’s cherry balsamic dressing
juice from 1 small lime
1 cup of diced aspargus
1/4 cup of chopped sun-dried tomatoes
1 bunch cilantro, roughly chopped
1 tablespoon of olive oil
1/2 cup red onion diced
1/2 cup red pepper diced
1/2 cup of Paleo Sour Cream
LETS COOK:
In a small bowl combine the dressing, lime juice & about 2 tablespoons of the cilantro. Keep about 1/4 cup to the side and pour the remaining marinade over the chicken & vegetables in a large bowl.
Add the remaining cilantro to the reserved 1/4 cup of marinade & combine with the 1/4 cup of sour cream. Place in the fridge to chill.
Heat a large skillet over medium to medium high heat. Add olive oil and chicken and veggie mix .
Sauté chicken until the chicken is no longer pink & juices run clear, and the veggies are soft and slightly browned. Last place cilantro mayo mix and sun-dried tomatoes and simmer for 10 -15 minutes.
Place chicken over spinach or spaghetti squash.
