Many of my clients are often asking me to provide them with recipes that are either super simple, time efficient or both. Here is a great chicken recipe that does not get much easier to prepare!
Ingredients:
4 skin-less, boneless chicken breast halves
3/4 cup of raw honey
1/2 cup of Dijon mustard
1/2 teaspoon of lemon pepper
1 tomato diced
1/2 cup of mushrooms halved
1 teaspoon of garlic
1/4 teaspoon of cumin
1/8 of nutmeg
4 slices of bacon cut in halves
* optional 1/2 cup of parmesan or raw cheddar cheese
Directions:
Preheat oven to 375 degrees F (190 degrees C).
Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard.
In a small bowl place lemon pepper, garlic, cumin, and nutmeg. Mix thoroughly and then sprinkle on top of chicken breasts. Then top with tomatoes and mushrooms.
Bake chicken 25 minutes in the oven.
Remove chicken from oven and top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 to 15 minutes, or until chicken is not pink in the middle, bacon is crisp, and cheese is bubbly.
Serve with veggies or over spinach.
