I know how everyone loves bacon oh so much.. and since football season has arrived here is a great appetizer for football weekends and tailgate celebrations.
Ingredients:
3 medium sized sweet potato cut into wedges
1/2 teaspoon salt
16 center-cut bacon slices
1/2 teaspoon pepper
1/2 cup diced red onion
1 tablespoon coconut oil
1 garlic clove, minced
1 (8-oz.) block raw cheddar cheese or almond cheese
1/2 cup plain coconut half and half
1 (6-oz.) can chopped green chiles
1 8 oz can diced tomatoes with Jalapeño
1/4 cup chopped fresh cilantro
Directions:
Preheat oven to 425°. Sprinkle potato wedges with salt. Wrap each with 1 bacon slice. Arrange potato wedges in a single layer in prepared pan. Sprinkle with pepper.
Bake on an aluminum foil baking sheet at 425° for 40 to 45 minutes or until bacon is crisp and browned.
Meanwhile, in a medium skillet sauté coconut oil and onion over medium-high heat for 5 minutes or until onions are slightly browned. Add garlic, and sauté for 1 minute. Remove from heat
Combine cheese, half and half, tomatoes, green chilies, and onion mixture in a large microwave-safe glass bowl.
Microwave at HIGH 2 1/2 minutes; stir and microwave 2 1/2 more minutes or until cheese is melted and mixture is smooth, stirring at 1-minute intervals.
Then top melted cheese dip with Cilantro.
Serve dip with sweet potato wedges.
