I found out over 11 years ago that I was severely allergic to gluten. At the time the “gluten” craze was nowhere near a craze!
My symptoms were horrible! I was sick after every meal and if I wasn’t nauseous I would get severe migraines. The doctors thought that it was a combination of acid reflux and stress.
They were wrong!
I took out the suggested foods that were on the “list to avoid” with acid reflux and I felt no difference.
A friend at the time had a gluten intolerance and told me I might want to look into that. I asked her “What’s Gluten?”
She explained to me that gluten was she explained it was a “glue-like” substance found in many oat and wheat products.
So basically what she was telling me is I was not going to be able to consume anything that I had been for the last 21 years! I was at my wit’s end and figured anything was better than feeling in the state I was in… So I became my own science experiment, and sure enough I felt better than I had in years.
I put a little gluten back in the following week just to make sure this was not just some coincidence and I was back to being sicker than a dog! Within 3 weeks I had dropped 15lbs and felt like a new person. I had so much inflammation in my body that it was causing everything I consumed to literally “glue” to me.
Unfortunately they did not have the “gluten-free” products they have now (in fact I am not sure they had any).So it was up to me to figure it out on my own. I believe the first week I ate basically fruit… I was so afraid of eating anything else. I slowly began to educate myself and create new recipes that actually tasted better than the processed filled crap I was filling my body with before!
I have now made it my mission to make it as easy as possible for my clients to lead a gluten-free lifestyle and not feel like they are restricted.
