For the summer I really enjoy a lot of salads. My grandma recently asked me at the dinner table the other night ” Don’t you get tired of salads”? My response was simple “No, because I add variety to my salads”.
I use different lettuce, vegetables, dressings, meats, fats etc and it really does not get mundane or boring to me ever.
One of my favorite salads is the Southwest salad so here is great recipe that tastes delicious and will leave you feeling satisfied.
Ingredients
1/4 cup green bell pepper, diced
1 tablespoon of olive oil
1/4 cup of red or yellow pepper diced
2 cloves of garlic
1 teaspoon of chili powder or creole seasoning
dash of pepper
2 teaspoons of fresh lime juice
2 roma tomatoes, diced
4 green onions, sliced
1 head romaine lettuce, washed and chopped
1/4 cup cilantro, chopped
2 ripe avocados, diced
1 cup crushed sweet potato tortilla chips (omit if doing the whole 30)
1 cup of salsa
Directions
In a medium skillet place olive oil, garlic, and chicken on medium-high heat and sauté until chicken is no longer pink.
Next add creole seasoning (or chili powder), pepper, cilantro, peppers, lime, and green onion. Cook for another 5 minutes combining all the ingredients together.
In a large bowl place chopped romaine, roma tomatoes, and diced avocado. Pour the chicken skillet mixture on top of the romaine lettuce leaves toss.
Sprinkle crushed sweet potato tortilla chips on the top. Add the salsa and do one final toss.
