Especially during the hot summer nights, it is so refreshing to have a cold treat that is really satisfying and refreshing.
Here is a great light dessert “Paleo” style that the whole family will enjoy!
Chocolate Mousse:
1 can of coconut milk ( open the can and put in the fridge over night)
1/4 cup unsweetened cocoa powder
3 oz of cacao dark chocolate (make sure you use a brand without soy lecithin)
1/2 teaspoon of vanilla
1 tablespoons of honey or grade B maple syrup
Raspberries (optional)
Directions:
In a large bowl place thickened coconut milk, cocoa powder, vanilla, and honey or syrup with a mixer.
In a small bowl place the chocolate either chips or broken up pieces of a bar and place in the microwave until melted throughout. Stir melted chocolate into the mousse mixture and place in the refrigerator until the mixture thickens.
Top with delicious raspberries for added flavor!
