Ingredients:
12 6′ corn tortillas
1 can of enchillada red sauce
1 60z can of green chilies
1 lb of ground turkey meat or ground beef
1/2 onion diced
1 green pepper chopped
1 garlic clove
1 tomato diced
1 bag of sweet potato chips
1 tablespoon of olive oil
1 avocado sliced
1/4 cup of diced green onion (optional)
1 6 oz can of sliced olives (optional)
Directions:
Preheat oven to 350 degrees. In a large skillet combine olive oil, onion, and garlic until onion is slightly browned. Then add meat, peppers, chiles, and tomato until meat is cooked throughout. Last, add salsa and let simmer for 10 to 15 minutes.
In a seperate casserole dish place 6 corn tortillas on the bottom and top with 1/2 a can of enchillada sauce and 1/2 of the skillet mix. Then place 6 more corn tortillas (for the layered effect) on top and pour remaining mix on top of that. Place crushed sweet potato chips on top until mix is completely covered. Top with small 60z can of sliced olives, sliced avocado, and green onion for added taste.
Place in oven and bake for 25 to 30 minutes.
