Coconut Banana Pancakes
Ingredients:
1 egg
1/2 cup almond flour
1/2 tsp vanilla extract
1 /2 of a banana mashed
1 pinch cinnamon
1/4 cup of unsweetened shredded coconut
1/4 cup unsweetened almond or coconut milk
3 tablespoons of sun butter (or peanut butter)
top with honey (optional)
Instructions:
Mix these ingredients together in a large mixing bowl. Oil or grease up your pan and heat over medium heat. Pour about a 1/4 cup of batter for each pancake, allowing each side to brown before flipping it.
I made these for my husband on Sunday and he devoured them!
